Overview of Kuwaiti Cuisine History:
 
     The Kuwaiti cuisine resembles its poly-ethnic diversity of the population in Kuwait. The Gulf Arabs have played an immense role in establishing the ancient trade routes that introduced spices from the East to Europe, and spices are an integral part of the Kuwaiti cuisine today. There is a vast range of foodstuff that is available in Kuwait. The staples of the Arabian, Western, Indian and Far Eastern diets are quite prominent in the cuisine of Kuwait.(Kuwaiti_Cuisine). In the Bedouin manner of cooking the entire meal is cooked and prepared in a single large pot over charcoal. Many Indian and Persian influences can be seen in the cuisine of Kuwait. The preparation methods as well as recipes show a little of the traditional Kuwaiti cuisine to have been influenced. The meals found in the cuisine of Kuwait can vary from being very spicy to mild, depending on the chef, or how you personally want your cuisine to taste.

Chicken Kuwaiti “Machbous”, ingredients and cooking instruction:


Delicious chicken “Machbous”, Special Kuwaiti “Machbous”
There is many ways of doing Kuwaiti “Machbous”; it is different from family to family in Kuwait. Each family in Kuwait has their own special way in preparing it.
This is one way of doing Kuwaiti “Machbous”:



Chicken "Machbous" 
Ingredients:
1 chicken
1 onion
3 pieces of garlic
4 cinnamon sticks
1 maggi “chicken stock”
1 small spoon salt
1 small spoon cumin powder
1 small spoon black paper
1 small spoon turmeric powder
1 small spoon green cardamom powder
1 spoon of saffron powder
3 cups of rice
2 liters of water

Cooking Instruction:


1.      Clean the chicken with water and wash it with lemon and salt to remove the bad smell.
2.      Put 2 liters of hot water in vessel let it boiled for 20 minutes.
3.      Add the one small spoon of salt, cumin, black paper, turmeric powder, cardamom powder, 4 cinnamon sticks and one maggi. Let it boiled for 40 minutes.
4.      Add the chicken to the water above, let it boiled until it become soft.
5.      Take the chicken out let it dry in empty vessel.
6.      Then let the chicken fried with little water and one spoon of saffron, until the chicken become tender and well cooked.
7.      Take the water of the boiled chicken and all other spices, and add to it 3 cups of rice and let it boiled for 30 minutes.
8.      Put the slice of onion, garlic and little of cooking oil in small vessel and mixed it together until it become brown.
9.      Then add it to the rice with little saffron powder, and mixed it until it is done and ready to eat.
